Ribs Within - A KCBS Sanctioned Competition Barbeque Team.
Doug Keiles, CBJ is the Pitmaster and Captain of the team. Doug is a driven competitor who loves BBQ almost as much as he loves his family (and the Mets). A seasoned griller, Doug took to smoke and charcoal like it was second nature. He creates a unique melange of flavors reminiscent of Caribbean and Asian tones with a zesty Cajun kick. His critically acclaimed work at the former R.U.B Hut, now GRUB HUT (www.grubhutbbq.com) helped Ribs Within put out their most consistent and best product. It showed with their 1st Grand Championship in Bristol, PA, a Reserve Grand Championship at Cabela’s in Hamburg, PA, and a Grand Championship (Ribs and Chicken Only) in Hillsborough, NJ. Doug spent almost 2 weeks guest cooking with the Chowhounds at the American Royal in KC, MO and Big Island BBQ (Hill Country) at the Best of the Best in Douglas, GA. Look for some new tricks he’s learned from Robbie Richter, Big Lou, Gary S, and some guy named Chris Lilly!
Jonathan Knopf Just recently named assistant Pitmaster, is a true Texan. Born in Dallas, TX where good barbeque is a matter of fact. His first barbeque experience was when he was two years old at Red Bryan's, a BBQ institution in Oak Cliff. He's had a taste for it ever since. His travels have taken him through states deeply rooted with unique barbeque traditions...from Texas to Louisiana...to South Carolina and North Carolina and now New Jersey. Jonathan was a key contributor to the Ribs Within Team in 2006. His organized nature and drive for perfection were a key component in the consistently excellent performance of Ribs Within. We are thrilled he is a member of the Ribs Within Barbeque Team.
Laura Keiles, CBJ is the Project Manager of his support staff. A professional project manager providing the timings of activities and events to ultimate preciseness. BBQ is an art but planning for each of these events is a science. She ensures that the RIBS WITHIN team has everything it needs to be successful. She is also the key component in the Presentation squad. All placement and portioning is her responsibility. Together, Doug and Laura look forward to seeing you at there upcoming events.Toney Foster is the support coordinator of the team. An international addition, Toney brings the Jamaican flavor and resourcefulness to the team. From prep, wood chopping, or clean up, he is the one keeping us one step ahead.
Wendy Horowitz is the newest member of the team. A relative novice at cooking BBQ, her love of eating BBQ has brought her to Ribs Within. Her role is to help in any way and create an expanding role for herself. Her attention to detail will be put to good use.
